African Peanut soup

African peanut soup is enjoyed in many West African countries such as Senegal, Guinea, Mali and, ect….

The soup is also known as Maffe Tiga or Tiga Degae , they are lot of varieties of peanut butter soup, it can be made  with beef, fish, chicken or completely vegetarian.  For this recipe, I used chicken but can substitute it with the meat of your choice.

Preparation time: 15 minutes

Cooking time: 45 minutes

Serve: 4

Ingredients:

  • 1 chicken, clean and cut into pieces
  • 4 tbsp peanut butter
  • 2 tablespoon peanut oil or any vegetable oil
  • 2 fresh tomatoes, mashed
  • 1 tbsp tomato paste
  • 2 onions, chopped
  • 2 Garlic gloves,
  •  Chili pepper (optional),
  • Black pepper
  • 1 bouillon cube or Maggi cube
  • 3 cups water

Optional: potatoes, carrots or pumpkin


Directions:

Step 1: In a cooking pot , heat the vegetable oil and fry the chicken until brown . Remove and reserve aside.

Step 2: Reduce the oil in the cooking pot  and leave around 2 tablespoon and add onions, mashed tomatoes, tomato paste, garlic, bouillon cube and black pepper. Stir-fry the mixture for 10 minutes.

Step 3:  Add water and the peanut butter, and then cook the whole for 20 minutes

Step 4: Add the chili pepper and salt to your taste. Simmer for 10 more minutes.

To finish, return fried chicken in the pot and let the whole simmer for 5 to 10 minutes.

The soup is ready when you get your desired consistency. If you like it super thick let it simmer for more minutes.

Serve with rice or Fufu and enjoy!!!!!
