Jollof Rice with Meat (Riz Gras)

I love jollof rice, and I make it in so many ways, sometimes I make it plain (Vegetarien Jollof Rice), with fish (Thieboudien), Coconut Jollof Rice  or with meat.

And this recipe is going to show how to make jollof rice with meat.

Ingredients:

  •  ½ kg rice (long grains or broken rice)
  •  ½ kilo of beef
  • For  Vegetables, you can add: cabbage, carrot, potato
  • 1 cup of green onion, chopped
  • ½  cup of Parsley and Some mint leaves, chopped
  • 1 teaspoon ground ginger or fresh ginger
  • 2 onions, chopped
  • black Pepper
  • Thyme leaves
  • 3 to 4 bay leaves
  • 1  Bouillon cube
  • 2 onions
  • 1 head of garlic, crushed
  •  ½  bell pepper, crushed
  • 250 ml oil
  • 3 Tomatoes, mashed
  • Tablespoons of tomato paste
  • Water and salt.

Note that I used beef for this recipe but you can use any type of meat.

Step 1: Heat the oil and fry the meat with onion, garlic, pepper, ginger and thyme leaves.

 Sauté for 5 minutes or until the meat is brown.

Step 2: Then add the mint leaves, parsley, red bell pepper and bouillon cube.

Add two cups of water and let the meat cook for 20 minutes.

 Step 3: Now Add the tomatoes, onion, green onion, garlic and tomato paste,. Add a cup of water and cook for 15 minutes.

Step 4: Add all the vegetables (potatoes, carrots, cabbage), and two cups of water with the bouillon cube. Add 2 bay leaves and salt to your taste. Cook the vegetables for 20 minutes or till everything is cooked.

Step 5: Remove the meat and vegetables from the pot when they are well cooked.

Then add 3 cups of water and the rice that has been washed with two bay leaves and salt to taste.

 Cook on very low heat until all the liquid is completely absorbed and the rice is cooked. You might need to turn often so that all sides are cooked. Serve the rice with the cooked vegetables and meat.
