Mango stew also called mangue sauce is a popular dish in Guinea mostly eaten during mango season. The stew is sold everywhere by street vendor and might be very spicy.
Remove the skin and bones of the fish, cut into small pieces.
In a blender or food processor, add onions, peppers, dried fish and blend together. But don’t blend it until smooth just for few second.
In a large pot, add the mangoes, onions mixture, bouillon cube, palm oil, salt and 2 cups of water.
Bring it to a boil and cook for 20 minutes, then reduce the heat on low and simmer for 10 min while stirring occasionally.
Serve hot and enjoy!
