Mandazi (East African Donuts)

Mandazi are those sweet and yummy East African donuts. They are known with different names depending on the Ethnic or location you are from. Some called them Maandazi,  Mahamri or Mamri.

These are made from flour and deep fried in hot oil,

Makes: 36 Mandazi           

Prep Time: 90min    Cooking Time: 10 min

Ingredients:

  • 3 cups All- Purpose flour
  • 1 egg
  • 1 teaspoon active dry yeast
  • ½ cup coconut milk
  • ½ cup sugar
  • ½ cup warm water
  • 1 tablespoon oil
  • Oil for deep frying

Optional:  1 teaspoon Ground cinnamon or Cardamom

Variations:  You can

1 - Replace the coconut milk with plain milk or Yogurt

2- Replace the tablespoon of oil with Butter

3-Replace the teaspoon of yeast with 2 teaspoon of baking powder.

Direction:

Step 1:  Dissolve the yeast in the warm water and set aside.

Step 2:   Beat the egg in a bowl; add the milk, sugar and oil. Mix well and set aside.

Step 3: On the 3 cups of flour, remove on cup and set aside. On the other cups of flour add the ground cinnamon and the yeast mixture. Mix well using your hands.

Step 4:  Gradually add the egg mixture on the flour and also the remaining cup of flour while mixing continuously until you get dough that is not too sticky. You may need to add more flour if the dough stick too much to your hands.

Step 5:  Transfer the dough in a flat area and knead for 10 to 15 minutes until the dough is soft, smooth and elastic.  Then put in a bowl and cover with napkin or aluminum foil and let the dough rise for 45 minutes or an hour.

Step 6:  Divide the dough into 9 equal small balls and use your rolling pan to flatten the balls into thick round shape. Then use a sharp knife or a cookie cutter to divide the round shape into your desired shape. You can make them triangles by dividing the round shapes into diagonals.


Step 7: Heat the vegetable oil on medium high heat and fry the Mandazi until golden brown. Remove and place on paper towel to remove the excess oil.

Serve the Mandazi warm for breakfast or snacks. Enjoy!!!!!!!!!!
