South African koeksisters are sweet and delicious donuts which are first braided, fried then soaked in a sweet lemony syrup, these can be served hot or cold as a dessert or snack.
For the dough, :
- 2 cups of al-purpose flour
- 1 egg
- 2 tablespoons butter
- 150 ml of milk
- 1 tsp salt
- 2 tbsp baking powder
- Water, as needed
- Vegetable oil for deep frying
For the lemony syrup
- 500g Sugar
- Juice of one lime or lemon
- 1 tablespoon fresh ginger, grated
- 1 cinnamon stick
- 2 cups water
The syrup should be made a day prior to the cooking day and kept in the refrigerator .
Step 1: In a saucepan pour the cups of water and bring to boil, then add the sugar and stir until it dissolved.
Step 2: Add the lemon juice, cinnamon sticks and ginger. Then reduce the heat to low and let simmer until the syrup is thick (30-40 min).
Step 3: Transfer into a bowl and refrigerate for at least 8 hours (preferably overnight).
Preparing the koeksisters dough:
Step 1: Put the flour in a large bowl, add the yeast and salt. Mix it all together
Step 2: Rub the butter into the flour, then add the egg and mix well.
Step 3: Pour the milk into the flour mixture and start to knead the dough.
You can add water if the dough is too dry. Knead the dough for a few minutes on a flat area.
Then refrigerate it for 30 minutes, then knead again for 5 min and divide it into small size balls.
Step 3: Use a rolling pin to flatten the small balls about 5 mm thick. Cut each into 3 strips but make sure not to cut all the way through, and then braid the strips.
Step 4: Heat the vegetable oil over medium heat and fry each until golden brown.
Remove the koeksisters and drain the oil. Then put them directly into the very cold syrup and let them soak it.
Drain the koeksisters from the syrup and Serve them hot or cold.
