Fried Rice

Making fried rice is an awesome way to use up your left over rice, so in this post I’m going to show you how I make fried rice.

Note that this recipe is not African it is more like Chinese fried, I love it and going to share the recipe.

Cooking Time: 15 minutes

Serve: 2-3


  • 2 cups of cooked rice or left over rice
  • ½ cup of chicken breast, cut into small pieces
  • 1 cup of frozen peas and carrots
  • 1 beaten egg
  • 4 tablespoon of oil
  • White pepper
  • 1 onion, sliced
  •  ½ cup green onion, sliced
  •  2 tablespoon of soy sauce

To get the perfect fried rice, the rice should be cold. So I usually  cooked the rice one day before in my rice cooker with 1 teaspoon of salt and a tablespoon of oil. Then put it in the refrigerator.


Step1:  Heat 1 tablespoon of oil in a skillet then add the onion and chicken, season with white pepper and salt. Stir fry for 3 minutes or until the chicken is cooked, then remove and set aside.

Step 2:  Add the peas and carrot in the skillet, stir fry for 2 to 3 minutes. Remove and set aside.

Step 3: Add another spoon of oil in the skillet and stir fry the egg until done. Remove and set aside.

Step 4:  Heat a large skillet, add a tablespoon of oil and stir in the rice. The skillet need to be very hot and rice should be cold to get perfect fried rice.

Then stir in the cooked chicken, add the peas and carrot, add the egg and the green onions.

Then add 2 tablespoon of soy sauce or to taste.

Now stir fry until the entire flavor come together around 2 to 3 minutes.

Serve immediately with chili and lemon.
