Egusi Soup is a common stew in many African countries, in Nigeria this soup is enjoyed almost every day. It is made from ground melon seed and can be served with any type of FuFu ( pounded yam, Gari ….) .
Here you will find out an easy way to make Egusi stew yet very delicious.

Ingredients
How to Make Egusi Soup:
Step 1: In a cooking pot add the meat and assorted meat (chicken or cow skin), then season with one sliced onion, the chopped garlic, thyme leaves, curry powder and the bouillon cube.
Step 2: Cover the pot with enough water (around 2 cups) and cook for 30 min or until the meat is almost tender.
Step3: Then add the dried fish in pot, should have soak the dried fish in water for at least 20 min. Cook for another 10 min and set aside.
Step 4: In another saucepan, heat the palm oil and add the remaining onion, mashed tomato and tomato paste and cook for 15 min.
Step 5: Add the ground crayfish or shrimp and the chili powder, stir fry for few minutes.
Step 6: In a bowl of water add the ground Egusi and mix well to make a paste.
Step 7: Pour the Egusi paste in the sauce and stir fry for 10 minutes on very low heat.
Step 8: Pour the cooked meat in the saucepan and cook for another 15 min. To finish add salt to your taste.
When it’s ready, you can serve with gari (Eba) or pounded yam. Enjoy!!!!!
