Beans with chicken

Beans are very present in the African cuisine, it can be made with chicken, beef or any types of meat. 

This recipe is simple beans casserole made with chicken and simple ingredients. I used dried beans but you can save time and use cans beans

Ingredients:

  • 2 cups dried beans (white beans , black eyed peas or  any )
  • 1 kg chicken 
  • 80ml vegetable oil
  • 2 tomatoes, Crushed
  • 1 tbsp tomato paste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bouillon cube ( Maggi )
  • ½ teaspoon grated ginger
  • salt and pepper to taste
  • water

Note: You can more spices if you wish such as coriander, parsley and green onions

Direction:

Soak the beans for at least 3 hours or overnight .

Step 1: Put the beans in a large pot , cover with water,  add a tsp of salt and bring to a boil .

Cook until beans are tender, about 1 or 2 h .

Once the beans are tender , remove from the pot and set aside.

Step 2: Heat the oil in another pot and add the chicken , onion, bouillon cube, garlic , grated ginger and black pepper . Saute for 10 to 15 minutes.

Step 3 : Add the  tomatoes , tomato paste and 2 cups of water. Simmer for 15 min.

Step 4 : Add the cooked beans and salt to taste. Then cook until the liquid is almost completely absorbed.

Serve with bread or anything you want.
