Roasted Chicken

This is a delicious recipe for a whole chicken, it is called “Poulet roti” in Guinea which literally means roasted chicken but chicken isn’t roasted. It is boiled in spices first until done, then fried in hot oil that’s because in Guinea we love to boil meat before frying.

Ingredients


  • 1 whole chicken, cleaned and at room temperature
  • 1 slice onion
  • 2 tbsp. of mustard
  • 1 tsp. Thyme leaves
  • 1 tsp. Rosemary
  • ½ cup of chopped Parsley
  • 1 tsp. Baking soda
  • 3 garlic cloves, crushed
  • 2 dried chili pepper
  • 1 bouillon cube
  • Black pepper and Salt, to taste
  • 2 l vegetable oil
  • Serve with fried Potatoes or fried plantains

Step 1: Add the chicken in a pot with onion, mustard, Thyme leaves, Rosemary, Parsley, garlic, black pepper, bouillon cube, chili pepper and a tsp. of Baking soda.

Cover with water and bring to boil.

Cook until the chicken is completely done. The cooking time will vary depending on the size of the chicken.

Check for doneness with a fork before you remove and set aside.

Step 2: Heat 2 liter of vegetable oil and deep fry the whole chicken until brown. Remove and place in a tissue paper to absorb the excess oil.

Note: If you want a healthier version, then the chicken place in a baking dish and roast it until brown.

Serve with potatoes or fried plantain.
