The West African (Liberia, Sierra Leone,) version of pumpkin soup is totally different from the western one.
This pumpkin soup is more like a thick stew and it is served with rice.
This recipe is very simple and easy to make, it is traditionally cooked with palm oil but you can use any vegetable oil.
Preparation time: 15 min
Cooking time: 40 min
Serves: 4-6
Ingredients:
Optional: 2 tablespoon peanut butter
Direction:
Step 1: In a saucepan, heat the palm oil and fry the onion with a bouillon cube for 5 min.
Step 2: Add the tomatoes and black pepper. Fry for 3 more minutes.
Step 3: Stir in the pumpkin in the sauce, add the meat and cover with water. Simmer for 20 min, at this point you can add some peanut butter if like.
Step 4: Mash the pumpkin in the soup and add the fish. Let simmer for 10 more min.
To finish, add some salt and chili pepper to your taste.
Serve hot with rice and enjoy!!!
